The only down side to this recipe is waiting for the brownies to cool enough to cut into! The Problem With Most Brownie Recipes
The one thing that I always hated about making brownies is the inconsistency of each brownie piece – especially the edges becoming too hard. This recipe solves that problem with a dense, wet batter – allowing the center to bake just enough, while keeping the edges soft.
Resist The Urge To Cook Them Longer
You want to pull the brownies at the 25 minute mark – just when the center is set that it doesn’t jiggle. Overcooking will lead to a hard outer crust and hard edges – and we want these to be nice and extra soft!
They Absolutely Need To Cool Before Cutting Into Them
Part of the trick with this recipe is the cooling time. When the brownies come out of the oven, the inner center texture is still melted. They won’t cut cleanly and certainly won’t lift out of your dish. As the brownies are allowed to cool completely, that inner texture becomes set enough, still allowing a soft, fudge-like texture. The outer layer cools to just barely harden, allowing cleaner knife cuts.
They Are Even Better The Next Day
Another common brownie problem – after they sit a day or two, they become even harder! Not the case with these brownies! They set up to be just a bit firmer than day one, but you still get that soft, smooth texture in every bite.

Fudge Brownies
Equipment
- 1 Glass Brownie Baking Dish An 8 x 8 or 7 x 9 works well for this recipe.
Ingredients
- ½ cup salted butter, melted
- 1 TBS olive oil
- 1 + ⅛ cup granulated sugar
- 2 eggs
- 2 tsp pure vanilla extract
- ¼ tsp fine sea salt
- ½ cup all-purpose flour
- ½ cup unsweetened cocoa powder
Instructions
- Set oven to preheat at 350℉.
- Grease your brownie dish .
- Whisk together melted butter, olive oil, and sugar.
- Add in the vanilla extract and eggs and whisk a minute or two until combined and fluffy.
- At this point, you'll want to switch from a whisk to a spatula or spoon. Mix into the egg mixture the remaining ingredients (flour, salt, and cocoa powder) until the mixture is evenly combined - it will be very thick.
- Spread the mixture into your baking dish. Bake at 350℉ for 25 minutes. The center should feel set enough that it doesn't jiggle.
- ALLOW TO COOK COMPLETELY BEFORE CUTTING!
- (Optional - Dust with powdered sugar before serving). Store leftovers in a sealed container.
